Welcome to Chumbles!

I couldn't let this ocasion pass :-)

Chumbles (named after his teddy bear) is a prolific poster on Masterchef on Digital Spy. It has been mooted that he sign up to Masterchef, in order to provide us with endless hilarity and great cooking. Sadly, he declined the offer :-(

Chumbles, will you reconsider, please??

Oh and by the by, family and myself are relocating in January to cold, freezing mao, built up, oil sandy Edmonton in Alberta, Canada. As I will be officially unemployed then, I can only hope that the blog will prosper as a result :-)

Thomas Crosby Muffins


Thomas Crosby, aka, Cheese and Bacon Breakfast Muffins

There is a nice story to go with this recipe. My mother-in-law, henceforth referred to as MIL, is a wonderful cook and loves collecting recipes. This is one of hers.

Thomas Crosby was missionary who worked primarily among the native Americans in the BC area of Canada. Legend has it he used to go by boat to the various hamlets, converting people and preaching to them. His big success was the conversion of the Tsimshian chief. You can read more about him here. So what does he have to do with muffins, you ask! Nothing, really :-) The reason my MIL calls these Thomas Crosby muffins is that when she went on the missionary boat as a tourist, the lady that cooks for the boat had made these muffins. MIL wanted to make them herself, so she persuaded her to let her (my MIL) have the recipe. And a family favourite was born (er, baked!)

So, instead of typing out the recipe, here’s the original recipe card from my MIL. Click on the picture for a high resolution image. Remember, you can leave out the bacon, and make the muffins suitable for vegetarians. This is what MIL does for my veggie husband. The muffins in the pictures are made by me, under the supervision of MIL in her kitchen. They taste awesome just warm with a pat of butter or margarine. Enjoy!!!

Oh, and the measurements are in cups, but 1 cup = roughly 250 ml
